Caramelized Apple Tart

Ingredient 8" Tart 20cm Tart
Pâte Sucrée 1 tart shell 1 tart shell
caramelized apples 2 apples 2 apples
almond cream 1 tart’s worth 1 tart’s worth
apricot jam 2 Tbsp. 2 Tbsp.

This tart is filled with a medley of complex flavors — delicate almond cream, sweet apples, and just a hint of bitterness from the caramelization.

Preparation

  1. Bake one Pâte Sucrée tart shell; cool.
  2. Prepare one batch of almond cream, preferably the day before, letting it rest overnight in the refrigerator.
  3. Cook a batch of caramelized apples.

Directions

  1. Assemble tart.
    Spread the almond cream in an even layer on the bottom of the tart shell. Arrange the caramelized apple slices on the cream.
  2. Bake.
    Bake tart at 350°F (180°C) for about 40 minutes.
  3. Finish.
    Heat the apricot jam in the microwave until it just starts bubbling, then brush on the surface of the tart to make a shiny coat.

Notes

  • If you want to make a very even layer of cream, you can use a pastry bag with a round tip to make a spiral, starting at the center of the tart.
