Ankoro Mochi

tsubuan as needed as needed

This mochi-based confection is about as simple as they come: A chunk of chewy mochi topped with a dollop of sweet anko.


  1. Prepare a batch of tsubuan. You can also use the easier-to-make recipe for koshian if you omit step three.


  1. Prepare mochi.
    Prepare a batch of boiled mochi, divided into roughly bite-sized pieces.
  2. Top and serve.
    Divide mochi into two or three serving dishes and top each with a generous dollop of anko. Serve warm or at room temperature.
