Spinach, Apple &
Pralined Almond Salad

baby spinach 4 oz. 100g
apple 1 1
pralined almonds ⅓ recipe ⅓ recipe
Dressing
apple cider vinegar 3 Tbsp. 3 Tbsp.
balsamic vinegar 3 Tbsp. 3 Tbsp.
paprika ¼ tsp. ¼ tsp.
sugar 2 Tbsp. 2 Tbsp.
olive oil ½ cup ½ cup
sesame seeds (optional) 2 Tbsp. 2 Tbsp.

This delicious and elegant salad has a unique tangy-sweet flavor and is surprisingly easy to make, especially if you pre-prepare a large batch of almonds to keep around. For some added seasonal flair, other fruits can be added or substituted.

Preparation

Pralined Almond Halves
  1. Prepare pralined almonds according to the recipe.
  2. Prepare the dressing by mixing all ingredients (the sesame seeds are optional).
  3. Core the apple and slice it into eight sections. Slice the sections into smallish bite-sized pieces.

Directions

  1. Toss and serve.
    Toss the spinach to coat lightly with dressing and top with a handful of nuts and apple pieces.

Variations

Other Fruits

In addition to apples, you can add seedless grapes cut in half. Or, for a tangier salad, you can add chunks of ruby grapefruit.

Notes

  • The pralined almonds take some work to prepare, but they keep well, so it’s easiest to make a large batch and use it over time.
  • Though best with baby spinach, it is possible to make this with bunched spinach so long as it isn’t too tough and you remove the stems.
